Taco Roll-Up Bake

2 (6-count) packages soft taco gluten-free tortillas
2 (8-oz) packages shredded Mexican cheese, divided
1½ lb ground beef
1 (1-oz) envelope gluten-free taco seasoning
1 (10-oz) can gluten-free enchilada sauce
1 (15.4-oz) can gluten-free refried beans
1 (16-oz) container refrigerated salsa

Preheat oven to 400°F. Line a large baking sheet with parchment paper.
Arrange 6 tortillas, slightly overlapping, in a rectangle on the prepared sheet. Sprinkle with 1 cup of shredded cheese. Top with the remaining tortillas, then sprinkle with another 1 cup of cheese. Bake for 8 minutes.
While the tortillas bake, cook the ground beef in a large skillet over medium heat until browned and crumbly. Drain any excess fat. Add taco seasoning and enchilada sauce; continue to cook until the mixture becomes thick.
Remove the tortillas from the oven. Dollop refried beans across the top and spread evenly, leaving a 1-inch border around the edges. Spread the beef mixture on top of the beans. Sprinkle with 1 cup of cheese.
Starting from one long side, carefully roll the layered tortillas jelly-roll style into a log. Place seam-side down on the baking sheet. Sprinkle the top with the remaining 1 cup of cheese.
Bake for 20 to 25 minutes or until golden brown and crisp. Let stand for 10 minutes before slicing.
Serve with salsa on the side for dipping.
