Slow Cooker Italian Beef and Gravy

Ingredience

2 pounds stew meat

1 can French onion soup or beef consommé

4 to 5 tablespoons peperoncini juice

1 to 2 tablespoons minced garlic from a jar

1 packet zesty Italian dressing mix

1 package brown gravy mix

1½ pounds baby gold potatoes (whole)

Peperoncini peppers (a few for topping)

A few tablespoons butter

Place the stew meat into the bottom of your slow cooker, spreading it out evenly.

Add the whole baby gold potatoes on top of the beef.

In a mixing bowl, combine the French onion soup or beef consommé, peperoncini juice, minced garlic, zesty Italian dressing mix, and brown gravy mix.

Whisk the mixture together until everything is well combined.

Pour the sauce mixture evenly over the beef and potatoes in the slow cooker.

Place a few peperoncini peppers on top of the mixture.

Add a few tablespoons of butter across the top. The butter will melt slowly and help enrich the gravy as everything cooks.

Cover the slow cooker with the lid.

Cook on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours.

After about 4 hours on HIGH, the stew meat should be tender and the potatoes soft.

Stir gently before serving so the beef and potatoes are coated in the rich gravy.

Serve hot.
