Tiramisu Crêpe Cake Roll & Espresso Martini

2 small egg yolks
60g granulated sugar
200g mascarpone (room temp)
300ml double cream
1½ tsp vanilla extract
1 tbsp coffee liqueur (optional)
Pokyny
In a heatproof bowl over a double boiler, whisk egg yolks and sugar for 4–5 minutes until thick and pale. Let cool.
Whip mascarpone and cream together until stiff.
Fold in the egg mixture and coffee liqueur. Set aside.
Chocolate Crêpes
Ingredients:
125g flour
30g cocoa powder
1 tsp cornflour
½ tsp salt
40g sugar
4 eggs
300ml milk
40g oil
1 tsp vanilla extract
Instructions:
Whisk all ingredients until smooth. Strain to remove lumps. Rest 15 mins.
Heat a non-stick pan over medium.
Pour ~1/2 cup batter, swirl to coat.
Cook 1–2 mins, flip, cook 15–30 secs.
Repeat (makes about 8 crêpes for a 12-inch pan).
Ladyfingers (Optional Homemade)
Ingredients:
3 egg whites
3 egg yolks
100 g sugar
75 g all-purpose flour
Powdered sugar (for dusting)
Instructions:
Preheat oven to 390°F (199°C). Line a baking tray.
Whip egg whites, adding sugar gradually until stiff peaks form.
Briefly whisk in yolks, then fold in sifted flour.
Pipe into 4-inch strips, dust with powdered sugar.
Bake 8–12 mins until lightly golden. Cool before using.
