200 g cucumber

30 ml lemon juice

30 ml simple syrup

200 ml water

1. Blend everything until smooth.

2. Strain through a nut milk bag or cheesecloth.

3. Weigh the liquid and add 1.5% lecithin powder by weight.

4. Blend again to incorporate.

5. Submerge an airstone connected to an aquarium pump.

6. Turn on the pump and generate foam.

7. Scoop and use immediately to top your cocktails.
