🥒 Ingredients (for 6 burritos)
Protein & Base:
32 oz (907g) chicken breast, raw & skinless
5 slices center-cut bacon
150g reduced-fat mozzarella
12 slices Swiss cheese (2 per burrito)
6 medium tortillas (high-protein or low-carb if you want lighter)
Sun-dried tomatoes (optional, ~30g)
Seasoning for Chicken:
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1 tsp Italian seasoning
Pesto Sauce:
150g nonfat cottage cheese
1 tbsp pesto
30g basil paste
Juice of ½ lemon
2 garlic cloves, minced
5g Parmesan powder
1 tsp chili flakes
Splash of low-sodium chicken bone broth (for creaminess)
Salt + pepper to taste

Air Fry the Chicken:
Dice chicken, season with salt, pepper, garlic powder, paprika, and Italian seasoning. Air fry at 400°F for 16–18 min, flipping halfway.
Cook the Bacon:
Bake 5 slices at 400°F for 12–15 min until crispy. Chop.
Make the Sauce:
Blend cottage cheese, pesto, basil paste, lemon juice, garlic, Parmesan, chili flakes, and splash of bone broth until creamy. Season to taste.
Mix Filling:
Toss cooked chicken + bacon with sauce in a large bowl. Fold in 150g mozzarella until cheesy and coated.
Assemble Burritos:
Lay tortilla flat
Add filling
Sprinkle optional sun-dried tomato
Top with 2 slices Swiss
Roll tight
Final Toast (Optional):
Crisp burritos in a skillet or air fryer until golden brown and cheese melts.
