Bourbon Bacon Jam Grilled Cheese

In a hot skillet or cast iron, add:

1/2lb chopped bacon and cook until golden brown

add 1/2 of a large diced onion to pan with bacon and bacon grease and cook until onions start to caramelize

well added a dash of our Oh My Garlic rub as well here

add 1/3 cup of brown sugar, 1/4 cup of maple syrup and a pour of your favorite bourbon

Turn heat down and cook for roughly 20 more minutes stirring frequently until it’s a nice “jam” like consistency

For the grilled cheese, we used sour dough bread, craft singles and white cheddar. Mix on your bacon jam and cook for a couple minutes on each side until til the cheese is totally melted
