Chicken & Potato Soup

1 large onion, diced

2 large carrots, peeled and diced

2 celery sticks, diced

2 medium potatoes, peeled and diced

4 garlic cloves, crushed

1 large leek, sliced

1 tbsp butter

2 tbsp tomato purée

2 chicken breasts

1 litre chicken stock

1 tsp Italian herbs

2 sprigs fresh thyme

2 bay leaves

Salt and pepper, to taste

50ml single cream

1 handful kale, chopped

Heat the butter in a large pot over medium heat. Add the onion, carrot, celery, potato, leek, and garlic. Sauté for 5–7 minutes, until softened.

Stir in the tomato purée, Italian herbs, thyme, and bay leaves. Cook for 1–2 minutes, then add the chicken breasts and stock. Season with salt and pepper.

Cover and simmer gently for 50 minutes, until the chicken is tender and cooked through.

Remove the thyme stalks and bay leaves. Take out the chicken, shred with two forks, and return to the pot.

Stir in the cream and chopped kale. Simmer for 5 minutes, until the kale has softened. Taste and adjust seasoning as needed.

Ladle into bowls and serve with warm, buttery sourdough.
