1️⃣ Skillet Chicken Thighs w/ Mushroom Gravy

Golden-seared chicken thighs in a cozy thyme + garlic mushroom gravy.

Sear 6 boneless, skinless chicken thighs in 1–2 tbsp avocado oil over medium-high heat, 5 min per side until golden. Remove and add 2 tbsp more oil + 1 diced onion + 1 lb thick-sliced baby bella mushrooms. Cook ~7 min, stirring infrequently (don’t salt yet), until soft + golden. Add 2 minced garlic cloves, 2–3 tbsp chopped thyme, and 1 tsp salt. Cook 1–2 more min. In a bowl, mix 2 cups chicken broth + 2 tbsp tamari. Pour in ¾ to deglaze. Whisk 2 tbsp arrowroot into remaining broth/tamari, then stir into the pan. Simmer 2–3 min until thick. Add chicken back, cover, cook on low 10 min. Serve over mashed sweet potatoes, pasta, or quinoa.

Perfect Caramelized Roast Beef

Fall-apart tender beef finished with crispy edges.

Season a 4 lb boneless chuck roast generously with salt and pepper. Bake in a foil-covered dish at 325°F for 4 hrs. Shred with two forks (if tight, bake 30 min more). Raise oven to 425°F. Toss shredded beef in its rendered fat and roast uncovered for 10–15 min until browned and caramelized. Serve hot or use in bowls, sandwiches, or tacos.

Glazed Salmon & Sesame Snap Peas

Sweet, spicy, gingery salmon with crispy roasted snap peas.

Marinate 4 salmon filets in: ½ cup coconut aminos, 2 tbsp honey, 2 tbsp rice vinegar, 2 tbsp sambal oelek, 2 tbsp grated ginger, 3 minced garlic cloves, 2 tsp sesame oil. Let sit 30 min–4 hrs. Roast 2x10 oz snap peas with 2 tsp sesame oil, ¼ tsp garlic powder, and salt at 400°F for 10 min, toss, then 5 more min. In a stainless pan, add 1 tbsp avocado oil + parchment paper. Cook salmon skin-side up 4 min, flip 3–4 more min. Remove fish, pour in marinade, simmer to reduce. Serve salmon + peas over rice, drizzle sauce, garnish w/ sesame seeds.
