Kickass Protein Cookies

3 large Honeycrisp apples (about 6 cups diced)
3 cups blueberries (375g)
3 tbsp maple syrup
1 tsp cinnamon
pinch of salt
3 scoops vanilla protein powder (≈ 1 cup) I use @promix code: KICKASSK8
1 cup old-fashioned oats
1 cup oat flour
1/2 cup Greek yogurt
2 tbsp honey
juice of 1/2 lemon (2 tbsp)
optional (for texture):
1/4 cup milk (only if mixture is too dry)
Pokyny
Preheat oven to 350°F and line a baking sheet with parchment paper.
Cook apples: Heat diced apples with maple syrup, cinnamon, lemon juice, and salt for 6–8 minutes until softened.
Make dough: Mix protein powder, honey, oat flour, oats, and Greek yogurt until thick and wet.
Combine: Fold in the apples and blueberries. Scoop into 12 cookies and place on the baking sheet.
Bake for 12 minutes.
notes:
Don’t over-bake. Pull them out while still soft.
If overly dry add a splash of milk.
If overly wet add a bit more oat flour.
