Dough
1/2 cup warm water
2 heaping tbsp instant yeast (about 3 packets worth)
1 tsp sugar
1 cup butter
2 cups milk
1 egg
7 cups all-purposeflour
3/4 cup white sugar
1 tsp salt
Filling
1/2 cup room temp butter
1 cup brown sugar
2 tbsp ground cinnamon
1/2 cup heavy cream
Frosting
1/2 cup room temp. butter
1 8oz block room temp. cream cheese
2 cups powdered sugar
1 tsp vanilla bean paste (can use vanilla extract as well)

Proof your yeast. In a cup or bowl add warm water, your yeast and a tsp of sugar. Mix well and allow to sit for 10 minutes until proofed and bubbly.
While yeast is proofing, warm up your milk and melt your butter. To a large standing mixer or bowl, pour in your milk and butter. Make sure it’s warm but not too hot! Add your proofed yeast and beaten egg. Mix together the flour, sugar and salt in a separate bowel then slowly add it into your bowl. Using a dough hook or your hands, mix and knead the dough for a few minutes until completely combined and smooth. You’ll know it’s done when it’s pulling away from the sides of the bowl. It should be a bit shaggy but not too sticky! Add flour if needed.
Lightly form your dough into a ball. Place in a bowl and cover with a towel. Let it rise for 1-2 hours until it’s doubled in size. While it’s rising, prepare your filling by adding your butter, brown sugar and cinnamon to a bowl. Mix with a fork until completely combined and smooth.
Once the dough has risen, punch it down to release the air. Place on a floured surface and gently form it into a ball. At this point you can leave it as one dough for 12 large cinnamon rolls or cut in half for around 24 rolls.
Gently roll it out into a large rectangle. Spread the filling evenly over the surface. Roll tightly and measure out your pieces. Use floss or string to cut your rolls by wrapping it around each piece and tying it off.
Preheat your oven to 350F. Place your rolls in a greased 9x13 baking dish and cover with a towel. Allow to rise again for 20-30 minutes. *Alternatively you can put them in the fridge overnight! Take them out 1-2 hours before baking and allow to rise*
Before baking, pour cream over the top of the rolls. Bake for 25-35 minutes until the tops are lightly golden. If you're doing smaller rolls, bake around 16-20 minutes or until golden!
While they're baking, make your frosting. Add your room temp butter and cream cheese to a bowl or standing mixer. Mix until completely combined. Sift in your powdered sugar and mix again. Add your vanilla and mix one more time.
Once your rolls are done baking, allow to cool at least 30 minutes before frosting. Frost and enjoy your delicious rolls🤍
