One-pan Marry Me Chickpeas

2 Tbsp butter (or plant-based spread)
2 teaspoons dried oregano or rosemary
1 teaspoon red pepper flakes
1 teaspoon dried basil
4-5 cloves of fresh garlic, finely minced
1 (210 ml) jar of sundried tomatoes, chopped
2 (540 ml) cans of chickpeas, rinsed
1 (400 ml) can of coconut milk or sub heavy cream
1 handful of fresh basil, chopped
1/2 cup freshly grated Parmesan (optional)
Pokyny
Bring a large skillet to medium heat and add butter, dry spices, and stir until fragrant ~2 mins. Add garlic and sundried tomatoes and stir for 2 more mins. Add chickpeas, and coconut milk or heavy cream. Stir for 7-9 mins, and lower the heat to a simmer. Add fresh basil (and fresh Parmesan optional) and stir it in. Serve with crusty sourdough, fresh pita, or your favorite dippables.
