Ingredience

1 lb ground meat (I used 85/15 ground beef)

1 medium onion, diced

3 tbsp tomato paste

1 zucchini, shredded

1 package of pasta of choice (I used high protein Goodles Loopdy Loos)

2-3 tsp salt (and more to taste)

1 tsp freshly cracked pepper

2 cups water

1.5 cups milk or cream

1/2 cup shredded sharp cheddar (and more to your liking)

Prep everything first, it’s a one pot meal!Grate your zucchini to a nice small shredded cheese size. Chop your onion into a small dice. Get all your ingredients measured out.

Making your meat sauce first, in a medium hot pan with olive oil, brown your meat with salt and pepper until halfway done then add your diced onions until softened. Make a little well in the middle for your tomato paste to cook off the tinny taste for about 1 minute. Add your zucchini and mix through with your meat mixture for 2-3 minutes.

And then the pasta: add your pasta, water, milk - cook until al dente (use package directions and take off one minute, you might need to add more water if your pasta absorbs it quickly). Once everything is cooked through, add your shredded cheese and mix through!
