For the Chicken

32 oz (2 lbs) boneless skinless chicken breast, diced into 1-inch chunks

1 large egg, beaten

1 tbsp (8g) cornstarch

1 tsp cracked black pepper

Olive oil spray

Honey Pepper Garlic Glaze

½ cup (120 ml) low sodium soy sauce

2 tbsp (30g) honey

1 tsp garlic paste (or 2 cloves fresh garlic, minced)

½ tsp onion powder

1 tsp cracked black pepper

¼ tsp red pepper flakes (more for heat)

1 tsp sriracha (or to taste)

½ tsp stevia (or other zero-cal sweetener)

1 tbsp rice vinegar (or apple cider vinegar)

1 tsp cornstarch + 2 tbsp water (slurry, to thicken)

Mac & Cheese Base

12 oz (340g) protein pasta (Barilla Plus or chickpea/lentil pasta)

¾ cup (180 ml) 2% evaporated milk

1 cup (240 ml) low sodium chicken broth

50g (about 3 tbsp) 1/3 reduced-fat cream cheese

100g (1 cup packed) reduced-fat shredded cheddar cheese

Extra cracked black pepper, to taste

Directions

Cook the Pasta

Boil 12 oz protein pasta according to package directions.

Drain and set aside.

Air Fry the Chicken

Toss diced chicken with beaten egg, 1 tbsp cornstarch, and 1 tsp pepper.

Spray air fryer basket lightly with oil.

Cook at 400°F for 12–14 minutes, shaking halfway, until golden and cooked through (165°F internal temp).

Make the Glaze

In a small saucepan, whisk together soy sauce, honey, garlic paste, onion powder, pepper, red pepper flakes, sriracha, stevia, and vinegar.

Simmer on medium for 3–4 minutes until fragrant.

Stir in cornstarch slurry and cook 1–2 minutes until thick and glossy.

Toss air-fried chicken in glaze until coated

In a separate saucepan, combine evaporated milk, chicken broth, and cream cheese.

Heat on medium, whisking until smooth.

Add shredded cheddar, stir until melted and creamy.

Season with black pepper to taste.

Stir cooked pasta into cheese sauce until fully coated.

Divide mac & cheese into 4 bowls.

Top each with glazed chicken.

Finish with extra black pepper and (optional) a sprinkle of cheddar.
