Classic French Vinaigrette

Ingredients:
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar (or sherry vinegar)
6 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper, to taste
Optional: 1 small shallot, finely minced
Instructions:
In a bowl, whisk together the Dijon mustard and vinegar until smooth.
Slowly drizzle in the olive oil while whisking continuously to emulsify.
Season with salt and pepper to taste.
(Optional) Stir in minced shallot for extra depth.
Let sit for 10-15 mir tes to allow flavors to meld before serving
