this oatmeal is perfect for slow weekend mornings when you want breakfast but don’t want to spend more than 10 minutes making it. throw on any toppings you have like fruit, peanut butter, coconut chips… anything you fancy to make it extra delish!
2 c non-dairy milk
1” chunk fresh ginger (sub: 1 tsp powdered ginger)
1 cinnamon stick (sub: 1 tsp powdered cinnamon)
1 1/2 tbsp coconut sugar
1 tsp vanilla extract
1 c old-fashioned oats
pinch of nutmeg, cloves, and salt

Simmer the milk, ginger, and cinnamon stick together in a medium pot over medium heat, about 5 minutes.
Add the coconut sugar and vanilla extract. Stir until the sugar dissolves.
Add the oats and bring back to a simmer, cooking for about 5 minutes, stirring occasionally.
Remove the pot from heat. Take out the cinnamon stick and ginger chunk, if using.
Add a pinch of nutmeg, cloves, salt, and stir again.
Divide between two bowls and top with fruit to serve.
