Crispy Garden Zucchini Herb Crackers

1 medium zucchini, finely grated
1 tbsp olive oil
Dry Mix
½ cup almond flour (or oat flour)
¼ cup finely grated Parmesan cheese
1 tbsp sesame seeds (optional, for crunch)
Seasoning
½ tsp garlic powder
½ tsp dried oregano
½ tsp dried thyme
½ tsp salt
¼ tsp black pepper
Paper-thin, deeply savory crackers with crispy golden edges and fragrant herbs.

Preheat oven to 325°F (165°C) 🔥
Line a baking sheet with parchment paper.
Grate zucchini finely.
Squeeze out excess moisture using a clean kitchen towel.
Combine zucchini and olive oil in a bowl.
Add almond flour and Parmesan.
Stir in sesame seeds and seasonings.
Mix until a soft dough forms.
Place dough between two sheets of parchment.
Roll very thin, about ⅛ inch thick.
Remove top parchment carefully.
Cut into small squares using a knife or pizza cutter.
Bake 25–30 minutes until golden and crisp 🔥
Cool completely before breaking apart.
