Steak And Tortellini Bake

1 lb sirloin steak or steak tips, cut into bite-sized pieces

Salt & black pepper, to taste

1 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

1 tbsp all-purpose flour

2 cups milk (whole milk or 2%)

1 cup beef broth

2 cups shredded sharp cheddar cheese (or golden cheddar blend)

1 tsp Dijon mustard (optional, for depth)

1 tsp paprika

1 package (20 oz) cheese tortellini, fresh or refrigerated

½ cup shredded mozzarella (for topping)

2 tbsp chopped parsley (for garnish)

Cook the Steak:

Preheat oven to 375°F (190°C).

Season steak with salt and pepper.

Heat olive oil in a skillet over medium-high heat. Sear steak for 2–3 minutes until browned. Remove and set aside.

Make the Golden Cheese Sauce:

In the same skillet, melt butter.

Stir in garlic and cook for 30 seconds.

Whisk in flour to make a roux, cooking for 1 minute.

Gradually whisk in milk and beef broth.

Stir in cheddar, Dijon, and paprika until smooth and creamy.

Assemble the Casserole:

Cook tortellini according to package directions (slightly undercook, as it will bake). Drain.

In a greased 9×13" baking dish, combine tortellini, steak, and cheese sauce.

Sprinkle mozzarella evenly on top.

Bake:

Bake uncovered for 20–25 minutes, until bubbly and golden.

Garnish with parsley before serving.
