Take It Easy” Part 3 - Chili Lime Chicken, Aji Verde, Mango

Ingredience

Chicken:

8 Chicken thighs, bone in, skin off

2 Limes, juice and Zest

1 T. soy Sauce

1 T. chili Powder

1 tsp. Smoked Paprika

5 cloves garlic, minced

1 T. Honey

Pinch Salt

Pinch Black Pepper

Aji Verde:

½ C. Greek Yogurt

½ C. Mayo

1 T. Olive Oil

1 Jalapeno

1 Habanero

1 T. Rice Vinegar

1 T. Honey

Handful Cilantro (Stems and Leaves

Pinch Salt

Pinch Black Pepper

Cucumber Mango Salsa:

½ English cucumber, diced

1 Ripe Mango, diced

Handful Cilantro, chopped

½ Red Onion, minced

1 Jalapeno, minced

Juice of 1 Lime

Pinch Salt

Pokyny

1 Start by marinating the chicken. In a bowl, add the chicken thighs, along with the rest of the ingredients.

Cover in plastic wrap, and place in the refrigerator for at least 30 minutes.

While Waiting, make your Aji Verde. Add all ingredients to a blender, and blend until very smooth.

Keep cool until ready to serve.

While you are waiting, also make the cucumber mango salsa. Place all ingredients in a bowl, and mix.

Taste to see if it is to your liking.

Preheat your gril, or get your charcoal going.

Once the chicken is good to go, place over direct heat, or right over the coals, for about 5 minutes. Then flip, and go another 5 minutes. Keep doing this until the chicken hits about 170 degrees. Take off the heat.

Serve the chicken with the Aji Verde and Cucumber

Mango Salsa.
