Wild Harvest Martini

Ingredience

Drink: Wild Harvest Martini

1 ¾ Ramsbury Gin

¾ Toasted Wild Rice Fino Sherry

Short 0.25oz Rose Bee Pollen Cordial *Recipe coming tomorrow

2 drops of Orange Bitters

Method: Stir all ingredients with ice and strain into a martini glass. Top with lemon verbena leaf and Spent citrus cordial foam*

Juice leftover cocktail garnishes such as lemon, lime, orange and grapefruits and add pectinex for clarification. Use the clarified juice to make a cordial by adding 70% sugar by weight. Add soy lecithin to make the foam and then use an aeration device to create foam as seen in video.
