Sarah Turner's Drunken Chicken Salad

Ingredience

CHICKEN:

7 Chicken Breasts (one per person, tho we had far too much salad on the day)

1/4 bottle Shau Shing (Chinese cooking wine or rice wine vinegar)

1 cups Kepcap Manis (sweet soy)

1 cup salty (normal) soy

1 ltr Chicken stock

1/4 cup sesame oilhewqwdSeRJrscqdst

3 cinamon sticksqq

6 star anise

8 dried mandarin peels

SALAD:

handful crispy challots (lots)

sesame seeds (lots)

spring onion (cut on chinese angle)

carrots (optional) grated

cucumber halved and seeded then cut on a chinese angle

bean shoots - lots/ 2 bags (this is the main body of the salad)

garlic chives

coriander - torn not chopped

mint leaves - torn not chopped

(don't be stingy with the herbs)

tomatoes with liquid removed OR cherry tomatoes halved

chicken breasts - shredded

DRESSING:

1 cup of liquid from the master stock

sesame oil (little)

3 lemons juiced

1 tspn sugar

fish sauce (little)

sau shin (little)

CHICKEN:

combine all ingredients in a large saucepan

place chicken in mixture COLD then bring to a simmer on a slow heat

simmer until cooked

leave in the stock until cooled (leave as long as possible, 24 hrs is ideal)

SALAD:

Combine ingredients and the chicken

DRESSING:

whisk to combine - adjust to taste till it tastes sweet, salty and sour

Poznámky

this is a chefs recipe, no sure amounts just lots of general instructions. Be wary though, out attempt was incredibly soggy very quickly so combine it at the last moment.
