20 Minute White Queso

8oz Monterey Jack cheese, shredded
8oz Pepper Jack cheese, shredded
4oz mozzarella cheese, shredded
1 can evaporated milk
1 can diced green chiles

In a medium saucepan, warm up evaporated milk over medium low heat for about 5 minutes.
Add in about half your shredded cheese and whisk. Let this cook for another 5 minutes while whisking often to avoid burning. After 5 minutes, add the remaining cheese. Continue to cook for about 10 more minutes. Continue to whisk often.
Once the mixture becomes thick and all the cheese has melted, remove the pan the heat. Whisk in milk, 2-3 tablespoons at a time, until you reach your desired consistency (more milk = thinner queso). OPTIONAL: if you have an immersion blender blend for 45 seconds to smooth out the queso.
Add your can of diced green chiles and whisk one more time. Adjust seasoning with salt.
Serve with your favorite chips & enjoy!
