Chicken Primavera

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 bell pepper, sliced

1 zucchini, sliced

1 cup broccoli florets

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh basil for garnish

Cooked pasta of your choice (optional)

Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Place the chicken in the skillet and cook for 6-7 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet to let it rest.

In the same skillet, add the minced garlic and sauté for about 30 seconds until aromatic. Add the sliced bell pepper, zucchini, and broccoli florets, cooking for 5-7 minutes with occasional stirring until the vegetables are tender yet crisp.

Add the cherry tomatoes and cook for another 2-3 minutes until they begin to soften. Slice the cooled chicken and return it to the skillet, mixing everything together.

Sprinkle the grated Parmesan cheese over the mixture, stirring until it melts and combines well. Adjust the salt and pepper to taste.

Serve the Chicken Primavera warm, garnished with fresh basil. For a more filling dish, serve over your choice of cooked pasta.
