Smoked Wine Braised Lamb Shank! I Love Lamb Shank and I Usua

8 lamb shanks
2 Tb khorovats rub (or you favorite BBQ rub or just salt and pepper)
Braising liquid
2 onions sliced
4 garlic cloves sliced
3 cups red wine
1 quart beef stock (or any stock)
4 sprigs rosemary
Season lamb shanks all over. Place onto 225 smoker. Smoke until the internal temperature is 150f (about 2 hours)

In a large pot over medium heat add oil onions garlic and sauté for 3-5 min. Add wine, stock and rosemary. Simmer for about 10 min. Pour into large roasting pan.
Add smoked shanks to roasting pan and place back on smoker. Turn up the heat to 350 and smoke for additional 3-4 hours or until internal temp reaches 205F. Cover and let rest for 20 min or up to 1 hour.
